A local company is ringing in the New Year in a big way.
Cowboy Flavor in Los Alamos has been invited to cook for the VIP section of the Rose Bowl tailgate party in Pasadena.
The catering company will serve up its Santa Maria-style barbecue to nearly 2,000 people at the New Year's Day event.
Cowboy flavor's only job that day will be cooking all of the meat.
Other food trucks will serve side dishes and desserts.
Owner Billy Ruiz says, "We're gonna go down there and try to represent the Central Coast, our style of cooking to the best that we can, and we've been telling people that we're going to the Rose Bowl football game, so we want to score a touchdown for the Central Coast and Santa Maria-style barbecue."
Ruiz says all of their beef is California raised and alway fresh, never frozen.
He says they try to buy all of their produce as locally as they can.
Ruiz says what makes Santa Maria-style barbecue so unique is the beef, unique seasoning, and the red oak wood used to cook it.
It is also always cooked on an open pit with open flames.
But this isn't their first experience at the event.
A few years ago, Ruiz and his wife rode through the parade and cooked for a few executives.
The company, which has been around for more than 30 years, has also developed some seasonings, barbecue sauces and tools.
