Woodstock's Pizza in San Luis Obispo to reopen Thursday

Woodstock's Pizza in San Luis Obispo is finishing a major expansion and renovation project at its oldest location.

The restaurant closed for 17 days while crews worked to double the size of the facility. They added a new backyard space and remodeled the main restaurant with two new bars, an expanded arcade, and more. The entire project cost $1.5 million.

"We doubled the size of the restaurant," said the owners, Laura and Jeff Ambrose.

The owners say they wanted to create more space for reservations, as well as fundraisers so they can do more community events.  "Our goal is to be the ultimate pizza experience, so it's not just the food, but it's the experience. The fun you have, good interactions with our employees, and with your friends, so we are really looking for an environment people want to come back to," said Ambrose.

The Woodstock's location on Higuera Street in downtown San Luis Obispo is one of seven in California, and it is the oldest Woodstock's location in the state.

"We think San Luis Obispo is a wonderful community. It has been our top performing store for many years. It's a community that has always supported us," said Ambrose.

The restaurant will reopen Thursday, but there will be an official grand reopening on September 27 during Farmers Market. During the event, there will be half-priced pitchers until 9 p.m., as well as a community gathering.

The owners say it was a priority to open before Cal Poly students arrive for the start of the Fall Quarter this weekend.

"We are very optimistic that the community will come back, and that they will support this, and honestly I hope that they just find this to be a really fun environment that they'll want to come back to and bring friends and family groups that they're associated with," said Ambrose.
