The Ribline on Broad Street in San Luis Obispo hasn't exactly closed, but it is altering its normal operations.
Owner Brian Appiano decided to close the Ribline Broad Street location when the pandemic hit, mainly because it focused so much on customers' indoor dining experience.
However, now that people can eat outside, he and his wife decided to open a new type of restaurant.
They call it The Switch, a restaurant that brings in chefs from San Luis Obispo county, and elsewhere, to "switch up" the menu for their kitchen residency.
Appiano mentioned he wanted to bring something new to the area saying, "You know L.A. and S.F. have pop up kitchens, I thought also it'd be a good way to get ethnic foods in the area."
The current menu is for his restaurant Sunsets, which will open soon in an air-stream on the pier in Pismo Beach.
They have everything from spicy fried chicken sandwiches, to filet minon tacos, and even ceviche tostadas.
