Edna's Bakery in San Luis Obispo is still baking fresh breads, pastries and desserts during the COVID-19 pandemic.

Before the shutdown, the bakery served restaurants, hotels and Amtrak, but now that businesses have changed, they started serving schools, hospitals and senior care facilities.

Due to the coronavirus outbreak, the business recently reduced its workforce from 100 employees to 35. They also used to operate with 22 delivery vans, but now they use eight.

The owner says he will have to rethink how he does business.

"Challenges will be hoping that the restaurants can come back online and actually have seating enough to drive the volumes up for the restaurants to being even justified to being open," said Phil Korte, the owner of Edna's Bakery.

Edna's Bakery has its menu posted online and is open for phone orders and delivery.
