Rib Line's newest location, Sunsets at Pismo, is one of three Airstream trailers opening on the Pismo Beach Pier.
On Thursday, the food truck had its soft opening during which guests were invited to enjoy the new menu before officially opening to the public.
They will be serving what is described as gourmet street food and drinks. So far, the menu includes shrimp tacos, fish and chips, fried chicken sandwiches, and filet mignon sandwiches. They will also soon be serving beer and wine, along with slushies, and soft-serve ice cream.
Opening day guest CJ Gormly enjoyed the new menu.
"The food has been amazing. It is like elevated comfort food. The filet mignon sandwich, the filet mignon tacos - absolutely amazing, very flavorful and super tender. I cut through the sandwich - it was like butter," he said.
Chef and owner Brian Appiano was elated about the opportunity to open the truck in the community where he lives.
"To be a member of the Pismo Beach community and to have this opportunity, I feel like this is a life-changing moment for my family and I," he says.
Sunsets at Pismo will be open to the public beginning Friday, Nov. 13, on the Pismo Beach Pier.
